To celebrate Pancake Day on Tuesday 9th February we have been busy whisking up some tasty Blueberry and Orange Pancakes using our Country Kitchen ceramics range.
Blueberry and Orange Pancakes
200g of plain flour
3 1/2 teaspoons of baking powder
1 teaspoon of salt
1 tablespoon of caster sugar
280ml of milk
1 large egg
45g of melted unsalted butter
200g of blueberries
zest of 1 orange
1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a hole in the centre and add the milk, blueberries, egg, butter and orange zest. Stir until well combined and the batter is smooth. Fold in the blueberries.
2. Heat a frying pan over medium to high heat. Grease the pan with oil or additional butter and pour in the batter, creating a pancake that is approximately 10mm in thickness. Fry the pancake until it is brown on both sides and serve warm with butter and maple syrup.
